Production area: Los Pandos, Almansa.
Vinification: The wine follows the traditional vinification practices with pressing and fermentation in horizontal rotating tanks. Maceration for 8 days at a temperature of 26 ° C. After malolactic fermentation, the wine is aged in 300 liter French oak barrels for a minimum of 6 months. After aging in barriques, a slight clarification and cold stabilization takes place. An amicrobial filtration follows before bottling in order to preserve all the organoleptic characteristics.
Sensory Characteristics: Clear and brilliant, with an incredibly intense cherry red color. On the nose, the fruitiness of the Monastrell grape remains intact, with subtle hints of confit fruit, combined with smoky hints and toasted tones of delicately toasted French oak barrels. Well balanced and fresh on the palate. Lively, full-bodied with great acidity and noble and smooth tannins.
Food matches: Ideal with savory stews, rich meats, pasta with mushrooms, dried meats such as Spanish ham and aged cheeses.
