GRAPES: Vemaccia di San Gimignano 100%.
SOIL: Medium mixture with yellow sands and clay.
PLANT SYSTEM: Guyd and Spcronato Cordon - 4,400 vines per hectare. Average age of the vines in production 20 25 years.
GRAPE PRODUCTION PER HA: 70 quintals
MICROCLIMATE: The microclimate conditions are made favorable by moderate temperature changes during the year. An excellent exposure favors the maturation and integrity of the fine grapes at the time of harvest.
VINIFICATION AND AGING: Grapes softly pressed with the aid of a horizontal press are fermented in white after refrigeration and static decantation of the must. The fermentation temperature is kept below 18'C and lasts about 12 days. Subsequently the wine undergoes the suitable aging in steel where it is also prepared for bottling.
ORGANOLEPTIC CHARACTERISTICS: Straw-colored with golden reflections, it has an intense and penetrating fragrance with a harmonious flavor and a characteristic bitter almond aftertaste. Given its structure it is among the few whites that it likes to undergo a short aging. Excellent with appetizers, risottì. white meats and all fish dishes. Serving temperature 10-12 degrees.
