The Valpolicella Ripasso takes its name from the process of “ripasso” -maceration - of the Valpolicella wine based on the residual pomace of Amarone for about 15 days. It is a wine suitable for important meat dishes or aged cheeses. Full and velvety that tells of an ancient manual skill.
