Vinification: Control of the fermentation temperature and use of selected yeasts. The vinification foresees a period of fermentation maceration of about 10 days, carried out at a temperature never higher than 26 ° C. After vinification, the wine is aged for 6 months in second passage French oak barrels and concrete tanks.
Sensory characteristics: Bright red rich in purple hues. The scent is characterized by intense and enveloping notes of morello cherry, plum and wild berries. On the palate it is expressed with a taste that is soft and balanced, with hints of red fruit and well-balanced spices and sweet tannins that accompany towards a long and pleasant finish.
Food matches: It goes perfectly with first courses, even au gratin, seasoned with meat or cheeses; roasts and semi-aged cheeses. Also good with pizza and with fatty fish, cooked roast or with tomato sauce.
