Winemaking: Last among the red grapes to be harvested, after crushing the skins are left to macerate in contact with the musts at temperatures between 25 ° and 28 ° C for a week days in large steel tanks . Frequent pumping-over allows excellent color extraction and good body. Malolactic fermentation is carried out and then the wine is placed in 30 hectolitre barrels for about 6 months. A refinement in bottle for at least 4 months follows.
The Wine: Intense ruby red with purple hues. The nose expresses fruity hints that recall cherry and blackberry. On the palate it opens up quite rustic, then it melts the edges and leaves room for more complex aromatic sensations, in which mature fruit is accompanied by a very elegant tannic texture. Just spiced in the finish, it maintains a good freshness and persistence.
Pairings: Excellent with meat, from grilled steak to pork chops, from fillet with green pepper, to salmì lamb.
