Grape variety: Pecorino
Production area: Hinterland of the municipality of Ortona and neighboring municipalities. The vineyards are exposed to the South-East so that they can enjoy the best hours of light.
Vinification: Crushing and destemming, contact with the skins of the must for about 12 hours at an average temperature of 3 ° C, soft pressing, static clarification of the must obtained. Subsequent fermentation at a temperature of 12 ° C. 20% of the masses make a quick passage in barrique.
Idea del Vino: recommended for lovers of fresh and dry wines, with a strong and intense character, characterized by a good dose of acidity and a pleasant fruity note.
Sensory characteristics: straw yellow in color with greenish reflections. Hints of white-fleshed fruits, in particular pear and apricot with light hints of lime. Remarkable balsamic notes. At first glance it immediately reveals a great structure, enveloping, fresh and with good acidity. Intense and persistent aftertaste.
Food pairings: Due to its balanced and fresh taste, Pecorino is a very versatile wine in terms of table pairings. It can be proposed as an aperitif, combining it with an appetizer of medium-aged cheeses. It lends itself to pleasantly pairing fish dishes, even the most elaborate ones, but also to dishes with strong flavors, based on molluscs and crustaceans. Being a well-structured wine, it should also be tried with white meats.
