Even in Montepulciano, as in every corner of Tuscany, Vin Santo has been produced for centuries.
It is a wine obtained from the withering of Malvasia Bianca, Pulcinculo (Grechetto) and Trebbiano Toscano.
It is left to mature to the "mother" in traditional barrels (caratelli) for at least 3 years.
There are several legends of the origin of the name, the most accredited is that this wine was used for Holy Mass.
