HARVEST Mid-September. Harvest by hand, early in the morning or late afternoon, in small crates, before arriving in the cellar, in cold storage.

FERMENTATION A careful selection of the grapes allows only the best grapes to be dedicated to the production of this wine. The soft pressing is followed by an immediate lowering of the temperature, to facilitate the decantation and elimination of the substances in suspension present in the must. The fermentation takes place in steel tanks at a controlled temperature between 13 and 15 ° C and the subsequent refinement, which lasts until February of the year following the harvest, takes place in temperature-controlled stainless steel tanks, designed to guarantee a constant temperature about 10 ° C, to preserve its aromatic heritage.

SENSORY ANALYSIS

COLOR Straw yellow and bright.

SMELL The nose highlights floral aromas harmoniously melted with white pomaceous and citrus hints with a vivid fragrance. The recognitions of hawthorn, pear and cedar are clear and give this kind of wine a roundness.

TASTE The pleasant freshness and the delicate sapidity, give, together with the floral and fruity scents already perceived on the nose and genuinely re-proposed to the taste, roundness and finesse accompanied by just warmth. The fruity olfactory sensations express themselves to the taste in equal finesse and complexity.

BACKGROUND

Ancient vine of undoubtedly Adriatic origin. The origin of its name, seems to derive from the structure of its small, winged bunch, with fairly spherical berries of an intense yellow color, resembling a small sparrow.
