TRENTO DOC - BRUT MILLESIMATO
Made from our best Chardonnay grapes, this typical sparkling wine is made by the traditional “Metodo Classico” (Méthode Champenoise): the wine undergoes for a second fermentation in the bottle and matures for 36 months on the lees.
VARIETY: Chardonnay
YIELD: 80 q/ha
VINES: guyot on sandy-loam soil
AGE OF THE VINES: 15 years
PLANTING LAYOUT: 2m x 0,90 m
ALTITUDE: 70 m above sea level
CLIMATE: sub-Mediterranean, characterised by winds from the south (so-called “Ora del Garda”) and the north (so-called “Peler”) that caress the vineyards day and night throughout the year, facilitating the grape’s optimal state of health.
HARVEST PERIOD: mid-August
VINIFICATION: the harvested grapes are sent to the winery in crates, where their stalks are removed and they are crushed. Soft pressing follows under oxygen reduction. The must obtained in this way is fermented in temperature-controlled
stainless steel tanks, after which the wine remains on lees until spring. It is then drawn and aged on refermentation lees for 36 months. When disgorging, it is topped up only with sparkling wine and a small amount of cane sugar. It is then aged in bottles for a few months.
TASTING NOTES: straw yellow colour with golden hues, characterised by a fine and persistent perlage with delicate notes of bread crusts, yeast, hazelnuts and pastries.
