Organoleptic characteristics
It is a product available in extremely limited quantities as it is obtained only from the dried pomace of Vin Santo grapes. During distillation, managed by the Nannoni artisan distillery which has discontinuous plants capable of processing small batches, the "head" and "tail" are wisely separated leaving the heart of the distillate.
