Soil type: basically loose, sandy-silty, with neutral-alkaline reaction, of marine origin.

Training system: Spurred cordon.

Average age of vines: 9 years.

Harvest period: mid-September / early October.

Vinification: The harvested grapes undergo a cold pre-fermentation maceration for 1 to 3 days.

Alcoholic fermentation: Fermentation is carried out in stainless steel fermentation tanks. It is activated thanks to selected yeasts and conducted until the sugar is depleted with pumping over and delestage at a temperature no higher than 27 ° C. Reduced the temperature to 19-20 ° C the wine remains in maceration on the skins for 5-8 days.
Malolactic fermentation: in barriques.

Aging: the wine is then poured directly into the barriques where it remains on the lees for a few months and then, after decanting, completes the maturation for a further 12 months. Aging in the bottle for about 6 months.

Organletic characteristics: The color is intense ruby ​​red with violet reflections, when young, it tends to garnet red with aging. The aroma is very intense and characteristic, with intense hints of spices, jam, with notes of tobacco and bitter cocoa. The taste is strong, persistent, and savory. Already good after two years from the harvest, it takes advantage of a further period of refinement in the bottle, to complete its character and personality.

Recommended pairings: I deserve to accompany important courses. Excellent with red meats, game and aged cheeses.
