VINIFICATION Picked grapes suffer a maceration to cold up to 3 days

ALCOHOLIC FERMENTATION The fermentation is effected in steel vats. It is activated thanks to selected yeasts and behavior up to the sugars' exhaustion to a non superior temperature to 27°C, with pumping over and delestage. Reduced the temperature to 19- 20°C the wine remains in maceration on the peels for 5-8 days.

MALOLACTIC FERMENTATION in barriques

REFINEMENT After alcolic fermentation the wine is directly racked in the barriques where it remains on the dregs until the malolactic fermentation is completed, after the racking it completes the maturation for further 12 months and 6 month in barrel by 25 hl. Refinement in bottle for about 6 months

ORGANOLECTIC FEATURES The color is red intense ruby with reflexes pomegranates.
