Grape variety: Negroamaro
Vinification: collection of slightly overripe grapes, de-stemming and crushing, cold pre-maceration in tank at 0°C for about 4-5 days and then maceration at controlled temperature of 21-22°C for 10-12 days. Alcoholic fermentation with native yeasts. Draining off and malolactic fermentation in stainless steel tanks. Refining in oak barriques for the next 12 months.
Sensory features: deep ruby red with garnet red reflections. Intense and complex aroma with spicy hints of tobacco and leather, and fruity notes of berries. To the mouth, it is impressive and robust, with well-trained tannins and a special smoothness, that make the wine persistent.
Best served with: good with rich first courses, red meats and seasoned cheeses.
