PRODUCTION AREA
The vineyard “Crevada” in the Astoria farm.
Vineyards: with a north-south orientation, with about 5,000 vine-stocks per hectare. 8-year old vine-stocks.
Average production: about 1.5 kg per vine-stock equalling 700/800 kg per hectare.
Grape variety: Chardonnay, Incrocio Manzoni 6.0.13, Sauvignon.
Growing technique: Gujot.
TECHNOLOGY
The grapes are manually picked, selected and collected in small baskets in September. The soft pressing and static decantation of the must follow. The primary fermentation takes place at 20/22°C with select yeasts, in French Allier oak barrels, medium toasting, 1/3 of them new and 2/3 of them second use: it lasts about 20/25 days and is followed by a complete malolactic fermentation. The wine matures in wood until late spring and is then moved into steel tanks, where it is kept for about 1-2 months before bottling. It rests one year in the bottle.
ORGANOLEPTIC CHARACTERISTICS
Colour: golden yellow and brilliant.
Bouquet: complex, of ripe fruit with vanilla notes.
Taste: dry, full, with excellent structure.
