THE CELLAR
Vinification method: The grapes, that are carefully selected at the moment of the harvest, are submitted to soft squeezing and the stripping of their stalks, after which the must product is left to ferment in stainless-steel vats at a controlled temperature (29°C), with selected yeast. The maceration lasts 15-20 days.
Ageing method: Our CASINA DI DORO is aged in small French barrels (5 Hl) for 18 months, 6 months in Slavonian oak barrels (30- 40 HL) and a few in stainless-steel vats, after ageing the wine is bottled and stays to refine for another 6 months.
AT TABLE
Tasting note: bright ruby, just a little bit orange on the nail. Complex nose, austere, where it differs from the olfactory descriptors of pure Sangiovese, blackberry jam, tobacco, pepper and oriental spices. mature and elegant tannins well integrated into the fine structure.
Pairing: Vino Nobile is a robust wine which is best appreciated with red meat, grills, stews and game. Excellent with Pienza pecorino cheese and all ripe cheeses, it also goes well with vegetarian dishes including eggplant or radicchio. It is perfect with fillet steak with mushrooms.
Serving: the bottle should be opened a couple of hours before drinking. To be served at a temperature between 16° and 18°. Vino Nobile is best enjoyed in the tulip glass.
