Tasting notes: Bright ruby red color with violet reflections. From the fragrant notes of cherry and pleasant drink. Supported by a sweet and at the same time dynamic tannic structure.
Grapes: Sangiovese 85%, Canaiolo Nero 10% - Mammolo 5%
Harvest Period: End of September - First decade of October
Vinification Techniques: After harvesting the grapes from the vineyards of Abbadia di Montepulciano, Acquaviva, Gracciano and Valiano are carefully selected.
The grapes are then de-stemmed and crushed and subjected to maceration for a period of 10-12 days during which the wines complete the alcoholic fermentation at a temperature not higher than 28 ° C. The wines completed the malolactic fermentation by the end of the first year in steel and then in Slavonian oak barrels.
Refining techniques: The wine has been aged for about 6 months in Slavonian oak barrels from 25 to 50 Hl of capacity.
