One of the flagships of Friulian wine production, an extremely precious wine that peasant wisdom has been able to derive from a fragile vine to be lovingly cultivated to obtain fruits that are a true gift of nature. For Torre Rosazza - a company that boasts the largest extension of Picolit vineyards in the Colli Orientali del Friuli - this wine has a particular and symbolic value that underlines the deep connection with the territory that the company has established since its origins.
winemaking
The grapes are harvested by hand in the autumn and then placed in the fruit shed, for a drying period that lasts for about 60 days. In this period the grapes lose about 40% of their weight. Later the grapes are de-stemmed and crushed the grapes. The must obtained then carries out alcoholic fermentation, partly in stainless steel tanks, partly in oak barrels.
The wine
The color is bright gold. The delicate and enveloping perfume refers to honey, custard and white peach. On the palate it fascinates with its compact texture, pleasant and intense sweetness.
Pairings
Always a meditation wine, it offers pleasant surprises with fois gras pâté, buffalo ricotta and acacia honey and butter or cream pastries. Also noteworthy with fresh cheeses such as Robiola and Tuma d'la Paja
