Soil type: basically loose, sandy-silty, with neutral-alkaline reaction, of marine origin.

Harvest period: mid-September / early October.
Vinification: The harvested grapes undergo a cold maceration for up to 3 days.
Alcoholic fermentation: Fermentation is carried out in stainless steel fermentation tanks. It is activated thanks to selected yeasts and conducted until the sugar is depleted with pumping over and delestage at a temperature not higher than 28 ° C. Reduced the temperature to 19-20 ° C the wine remains in maceration on the skins for 8 days.
Malolactic fermentation: in cement blocks no sulfites are added

Organletic characteristics: The color is intense ruby red with garnet reflections. The aroma is very intense and characteristic, with intense hints of spices and jam, well supported by a nete boise. The taste is harmonious, persistent, pleasantly dry and savory, which becomes softer with aging.
Recommended pairings: I Deserve to accompany savory first courses. Excellent with red meats, game and aged cheeses.
