“MINA” Colli Di Conegliano D.O.C.G.
White Wine
PRODUCTION AREA
The vineyard “Crevada” in the Astoria farm.
Vineyards: with a north-south orientation, with about 5,000 vine-stocks per hectare. 15-year old vine-stocks.
Average production: about 1.5 kg per vine-stock equalling 700/800 kg per hectare.
Grape variety: Chardonnay, Incrocio Manzoni 6.0.13, Sauvignon.
Growing technique: Gujot.
TECHNOLOGY
The grapes are manually picked, selected and collected in small baskets; they are then taken to the cellar for soft pressing and static decantation of the must. The primary fermentation starts at 18/20°C with select yeasts, and then continues at 13/14° C in steel tanks, where the wine carries on evolving even when the fermentation has finished. This enables the wine to express its fresh and citrus fruit aromas at best.
After some months of refining on the ‘noble lees’, during which it acquires more complex organoleptic features, the wine is filtered and bottled. Its character becomes fully grown after a necessary rest in the bottle.
