Production area: Mid-hill vineyards in the area surrounding Mogoro.
Vinification: Fermentation and maceration for 15 days in horizontal steel tanks at a temperature of 22 ° C. Use of the delestage technique which consists in emptying the tank where the crushed grapes (must + pomace) only of the liquid part, letting the cap of pomace settle on the bottom, and then fill it again. This ups and downs cause the hat to break, lightly press, and therefore improve extraction. Aging in French oak barrels for 6 months.
Sensory characteristics: Impenetrable intense ruby red. Aromas of black berries and plum with notes of vanilla and cocoa and a finish of Mediterranean scrub. In the mouth it reveals its great structure and its great extract to end in a powerful and persistent sip.
Food pairings: Structured and spicy dishes, seasoned first courses based on pork and sheep, and game risottos, meat main courses, excellent with aged sheep and cow cheeses.
