Vinification: manual and late harvest of the grapes (beginning of October) following withering on the plant. Destemming and crushing; maceration at a controlled temperature for 10-12 days with periodic pumping over with rain; racking; malolactic fermentation and aging in American and French first and second pass oak barrels for about 6 months.

Sensory Characteristics: impenetrable ruby ​​red color with garnet reflections; intense and complex bouquet, with hints of very ripe red fruits, cherry jam and black cherry, dried figs; light notes of cinnamon and vanilla. The palate is full and enveloping, with an excellent balance between sweetness and acidity and a remarkable persistence.

Pairings: excellent with mature pecorino cheeses with a strong taste, toasted almonds, figs, chestnuts, dry pastries.
