HARVEST Grapes are handpicked at the end of September, early in the morning or late in the afternoon, and placed in small trays kept in cold cells before being taken to the winery.
FERMENTATION Once they have been gently pressed, grapes are separated from skins. The must obtained is conveyed into steel tanks and brought to a temperature of 5°C. then it is decanted to get a limpid must, which is fermented at controlled temperatures. It is left ageing in steel vats until February approximately, thus the wine is kept at a temperature of about 10°C to preserve its aromas.
