Astoria Lounge "Fashion Victim" Brut

PRODUCTION AREA
Farm Val de Brun.
Vineyards: are north-south and west-east oriented with about 4000/4500 vine-stocks per hectare that in average are about  8/12 years old.
Average production: 3/4 kg per vine-stock corresponding to 120/130 q. per hectare.
Grapes: aromatic variety typical from Treviso province.
Growing system: Sylvoz.

TECHNOLOGY
The grapes are manually harvested in September and are then soft pressed. The skins are then subject to a short cold maceration and the must to static racking. The must primary fermentation takes place in steel tanks at 18/19°C with select yeasts. The new wine is then kept on the noble lees for some weeks. Then the foam removal lasts 20/25 days at 18°C. After that the sparkling wine is kept on the lees for some weeks.  Then the tartaric acid is stabilised and the sparkling wine is bottled. Final ageing in bottle.

ORGANOLEPTIC CHARACTERISTICS
Perlage: very fine and persistent.
Colour: straw yellow with greenish reflections.
Bouquet: ethereal, delicate, and very characteristic because of the synergy between the variety perfume and the yeasts. Clear-cut aroma.
Taste: full, harmonious, dry.

Alcohol content, % vol. 10.50 – 11.50
Sugars, g/l 13.50 – 14.50
Total acidity, g/l 5.50 – 6.50

SERVING TEMPERATURE
5 - 6° C, obtained in the ice bucket.

PRAECLARUS BRUT

BLANC DE BLANCS ALTO ADIGE DOC

Sparkling South Tyrolean joie de vivre. Elegance, freshness, harmony and complexity. Inspiring and seductive, refreshing and lively.

Brilliant yellow with golden reflexes. Intense and particularly fine, velvety bouquet of almond blossoms, peaches and apricots, with hints of fresh hazelnuts and bread crusts. Very fine, long-lasting perlage.

• Terroir
  The Chardonnay grapes come from vineyards above San Paolo, situated between 300 and 500 metres above sea level on the calcareous dolomite rock of the Mendel range with its sand and clay deposits. The southeast-facing location, constant downdraughts and temperature differences between day and night during the autumn combine to produce a unique microclimate where the grapes fully ripen for an above-average length of time on the vine, thus developing an optimal acid-to-sugar ratio.
• Vinification
  The ripe grapes are hand-picked. Gentle pressing of the whole grapes is followed by several months of aging of the basic wine in large wooden barrels; then comes traditional bottle fermentation with 40 months of maturing on the fine lees at a naturally constant temperature in the confines of the historic bunker.

PRODUCTION AREA

Farm Val de Brun.

Vineyards: with a north-south and west-east orientation, with about 4,000/4,500 vine-stocks per hectare with an average age of about 8/12 years. 

Grape variety: aromatic variety typical from Treviso province.

Growing technique: Sylvoz.

 

TECHNOLOGY

The grapes are picked a few days before their full ripeness so that they have lower sugar content, higher acidity and a more fruity bouquet. Traditional vinification with soft pressing and partial cold maceration. The must is then kept at 0°C and used to produce various lots of sparkling wine during the year. The fermentation is performed at about 10/12°C with select yeast and guarantees highly aromatic and intense scents. While the must is in full fermentation, it is moved to the autoclave for the foam formation so as to turn it into a finished sparkling wine through a single fermentation at low temperature over a period of 35/40 days. This aims at strengthening and developing the aromatic component that is very special and characterises this sparkling wine. The low temperature fermentation causes the formation of substances that build the structure and convey importance to the wine, so as to compensate for the low alcohol content and obtain a perfectly harmonious taste. At the end of the foam formation, the sparkling wine is kept on its noble lees for 20/30 days to complete and enrich its organoleptic characteristics. Before being bottled, a small percentage of must of fine aromatic grapes is added to the sparkling wine to complete the taste and bouquet of the product and strike a perfect balance between them. 

 

ORGANOLEPTIC CHARACTERISTICS

Perlage: very fine and persistent. 

Colour: straw yellow with greenish reflections.

Bouquet: ethereal, delicate, very personal due to the synergy of the variety aromas and the yeast perfumes; with a clear-cut aromatic note. 

Taste: full, harmonious and dry.

Total acidity, g/l 5.50 – 6.50

Grape variety: aromatic varieties typical of the upper Treviso area.

Growing technique: Sylvoz.

 

TECHNOLOGY

The grapes are harvested a few days before they fully mature, in order to keep their sugar content lower, their acidity higher and their aroma fruitier. A traditional wine-making process is followed, with soft pressing and partial cold maceration. Fermentation occurs at approximately 10/12°C with selected yeasts, in order to achieve highly aromatic and intense aromas. In full fermentation, the must is moved directly to a pressure tank for the second fermentation and the addition of a small amount of wine made using red grapes and short maceration periods, which gives the sparkling wine its much sought-after colour and timbre. To boost the strength and development of the highly particular aroma that characterises this sparkling wine, a single fermentation process is carried out, lasting for 35/40 days, at a low temperature. In addition, the winemaker encourages the formation of substances that give structure and depth to the wine, thereby offsetting the low alcohol content and maintaining a perfect balance of taste. Once the second fermentation is complete, the sparkling wine is refined on fine dregs for 20/30 days, to complete and enrich its organoleptic properties. Before bottling, a small percentage of the must of fine aromatic grapes is added to complete and balance the wine's taste and bouquet.

Colour: soft pink.

Bouquet: airy, delicate, very particular given the synergy of varietal aromas and fragrances of the yeast; with strong aromatic notes.

Taste: full, harmonious and delicately soft.
