It comes from a right balance among white vine varieties produced in the most suitable areas.
TECHNOLOGY
Vinification strictly off the skins, immediate separation of the solid parts, must cleaning at low temperature, controlled fermentation with select yeasts.
The foam is removed in a large container (autoclave) at low temperature, slowly to exalt the flavours of this wine and of the yeast.
ORGANOLEPTIC CHARACTERISTICS
Perlage: fine, persistent in thick fountains.
Colour: straw yellow with greenish reflections.
Bouquet: etheral, fine, persistent, with a slightly scent of yeast.
Taste: dry, delicate, acid in generous harmony.
