Pinot Nero DOC Alto Adige

Liquid beauty for nose and palate

The Pinot Nero is a very fastidious variety of grape, requiring the right soils and climate, with no compromise permitted. Its thin skin needs plenty of attention, which it duly receives in the vineyards and cellars of Castel Sallegg.

The wine is a ruby-red with a garnet-red glimmer. It has a clean, typical aroma of red berries, cherries and notes of spices. Moderately heavy, balanced and soft on the palate, it has a fresh finish with fine and spicy tannins and a good aftertaste.

Our Pinot Nero is delicious paired with hearty poultry dishes, dark meat and mature mild cheeses.

Tasting notes:

Medium ruby colour with garnet hues.

Typically clean aroma with a mildly earthy note. Red berries, cherry and spices on the nose. Smooth, well-rounded flavour.

Balanced and medium-bodied. Fresh, tannic and lingering finish.

Cellaring recommendations: Up to 5 years or longer for particularly outstanding vintages

Wine and food pairing: A perfect accompaniment for hearty poultry dishes, dark meat and mild mature cheese.

Grape variety: 100% Pinot Nero

Terroir: Kaltern - Leisenpuiten: 500 m above sea level.Sandy loam with excellent water retention. Kaltern - Klughammer: 230 m above sea level. Sandy, reddish porphyry soil.

Training system: Guyot

Yield per vine: 1.5 kg - 70 hl/ha

Production process: Controlled fermentation in stainless steel tanks for 15 days at a maximum of 28°C with subsequent malolactic fermentation.

Aging: 12 months in French barrique casks.
