PLÖTZNER Weissburgunder (Pinot Bianco)

DESCRIPTION This variety has been cultivated in South Tyrol for over a century and has become a reference point for our wines. Depending on the vintage, its aromatic complexity develops flavours of apple, peach, apricot or pear. Its acidity and minerality are convincing on the palate: it is one of South Tyrol’s best-loved wines. The considerable temperature difference between day and night, is providing this Weissburgunder (Pinot Bianco) with its unique character.

FERMENTATION slow fermentation at controlled temperature in Inox followed by maturation on fine yeast for 5 - 7 months, partially malolactic fermentation

In the glass, Dettori Bianco reveals an antique gold color, material and shining.

The olfactory picture is sunny and joyful, painted by sweet aromas that recall mandarin peel, candied apricot, dandelion honey, helichrysum, macerated flowers and chestnut, enriched by hints of hay, white pepper and brackish gusts.

Overwhelming, dry and full on the palate, where the warm enveloping is well supported by citrus freshness and penetrating saline vein. Endless finish capable of evoking marine notes and perceptions of ginger and flowers, accompanied by a soft and sweet tannic sensation.

An expression with a refined and overflowing character, skilled in combining smoothness and expressive richness.

Pairings: Dettori Bianco is configured as a gastronomic label that requires a structured combination. First courses with porcini mushrooms or with white ragù, pasta stuffed with white meats, fried lamb, rabbit pie, Milanese ossobuco and veal blanquette are valid ideas. You can dare by pairing the Dettori Bianco with eel in teriyaki sauce or with first courses with sea urchins.
